spring is here!



I'm almost afraid to utter those words for fear that I'll scare it away, but with the snow almost completely gone and 70s in the forecast, I think spring is (finally) here to stay. Other signs that spring is here:

  • the sunroom was toasty warm this afternoon
  • cardinals can be heard from morning to evening
  • the frisbee golfers are out in full force
  • garage sale signs litter the corners of busy intersections
  • greenhouses are filling up with flowers and potting soil
  • everyone in the neighborhood is going for an evening stroll
Tomorrow's high is sunny and 65 and it's a little bit ridiculous how giddy that makes me feel. Bring on the sunshine!

favorite eats // energy bites

These little nuggets have become quite the staple at our house. I discovered this recipe last summer and have been cranking out batches of them ever since. However, I have never come up with a good name for this recipe. They're originally called "Energy Bites", but that's sort of boring. Tim is grown fond of calling them "Speed Balls" or "Speed Bombs", which are both extremely weird and awkward. So I guess the jury is still out on the official name. Nonetheless, these little puppies are packed with energy and goodness, and perfect for hikes and camping trips. Yeah, camping trips...remember those? Those times when you sleep under the stars and have bonfires and go on hikes, all in sunny 70-degree weather. I've nearly forgotten what camping is thanks to yet another snow storm raging outside my window on the 22nd day of April. Pure craziness. But you can bet I'll be whipping up a batch of Speed Balls for our trip out west in a few weeks!

Healthy Energy Bites
adapted from Gimme Some Oven blog

1 cup dry oatmeal (I use old-fashioned oats)
2/3 cup coconut flakes
1/2 cup peanut butter
1/2 cup chocolate chips (or any sort of add-in you like)
1/2 cup ground flaxseed or wheat germ
1/3 cup honey or maple syrup
1 tsp. vanilla extract
1 tbsp. chia seeds (optional)

Stir all ingredients together in a medium bowl until thoroughly mixed. Let chill in the refrigerator for half an hour. Once chilled, roll into balls of whatever size you would like - I make mine about 1" in diameter. These can be stored in an airtight container in the refrigerator for up to 1 week.

when bad things happen


In the midst of some sad news this week - the passing of a friend and colleague, and the shock of the Boston Marathon bombings - this verse has been in my mind the past couple of days. Yes, life is fragile and tough times and seasons of hardships are going to come, but this verse reminds me of the hope of Heaven and the comfort that can only come from a Savior who is concerned about each and every detail - the tears, the trials, the good, the bad. And for someone who could shed tears and internalize every bad news story she hears, that is some good news! There is hope, even in the bleakest of times.

I'm not one to complain about the weather, especially when I live in a state like Minnesota - cold, long winters are just a fact of life. However, don't you think it's just a bit crazy that it's April 15th and we still have a foot of snow on ground and more on the way? Mom reminded me the other day that exactly a year ago, her, Tara, and Grandma were here to see our new house. And you know what I wore on that Saturday during showing off our house and shopping downtown? Shorts. For real.

And I think all this crazy cold anti-spring weather has contributed to my lack of creativity and writing; I literally haven't done anything noteworthy in the way of design work or blog writing in weeks. Gross. Someone get me some vitamin D stat!

However, while doing nothing creative, we have been...
  • watching a lot of 30 Rock - new fave show. I know, a few years behind the trend as usual.
  • spending the past few weekends with family and friends
  • celebrating Evie's first birthday
  • compiling gear lists and play lists for our trip out west (in just a few weeks!)
  • listening to A Prairie Home Companion during road trips
  • knee deep in grad school homework (Tim)
  • wanting to put up a gallery wall in the house (me)
